prep the wings
Preheat oven to 250°F. Pat dry the chicken wings and season with the spices and baking powder (NOT baking soda).
bake at low temp
Arrange the wings in a single layer on a wire rack set inside a lined baking sheet. Bake for 30 minutes to allow the chicken fat to render.
bake at high temp
Increase the temperature to 425°F. Bake the wings for 40-45 more minutes or until they are golden brown.
make the wing sauce
In a small dish, combine the wing sauce ingredients and set aside until the wings are done baking.
toss the wings
In a large bowl, toss the wings with the wing sauce. Plate the wings, then garnish with parsley.
