In a mixing bowl, add the almond flour, coconut flour, baking powder, salt and cardamom. Whisk well to combine.

In a small bowl, combine the monk fruit sweetener and orange zest. Rub together for 10-20 seconds to release the citrus oils.

Add the fresh orange juice to the zest mixture.Add egg yolks and vanilla. Drizzle in the olive oil while whisking.

Add dry ingredients to the yolk mixture. Beat the egg whites separately until stiff peaks form, then fold spoonfuls of the thick batter into the egg whites.

Transfer batter to the cake pan. Top with sliced almonds, then bake for 22-26 minutes.
