make the crust
Toast the almond flour in a pan until golden. Add it to a mixing bowl with the crust ingredients.
Press into a springform pan and bake for 8-10 minutes at 350°F.
make the filling
Beat together the filling ingredients, adding the eggs and sour cream last. Pour it into the crust and bake at 225°F for just under 2 hours.
serve with topping
Cook the strawberry sauce, then spoon it on top of the cheesecake to serve.
