brown the meat
In a large pot, sauté the onion in olive oil. Add the garlic and ground beef, cooking until the meat is browned. Add the seasonings.
simmer
Pour in the canned diced tomatoes, and broth. Add the dried oregano and parsley. Bring the soup to a boil then reduce the heat and let it simmer for 10 minutes.
final step
Add the zucchini and cook for a couple of minutes. Stir in the kale and parmesan.
serve
Ladle the hot soup into serving bowls. Garnish with more parsley, parmesan and red pepper flakes.
