prepare the zucchini
Grate the zucchini and sprinkle it with salt. Let it sit for 15-20 minutes. Transfer it to a clean dish towel and squeeze out excess water.
Add zucchini and remaining pesto ingredients to a food processor or blender. Blend/process until it's almost smooth. Taste and adjust as needed.
Transfer to a serving dish and top with more pine nuts or fresh basil leaves. Or, store in the refrigerator to use later!
