make the marinade
Mix together the ingredients to make a Brazilian-inspired marinade. Combine them in a small bowl.
marinate the tri-tip
Place the tri-tip in a Ziplock bag and pour in the marinade. Refrigerate for 4-24 hours.
smoke
Preheat the smoker to 225°F. Smoke the tri-tip to your target internal temperature (130-135°F for medium-rare).
sear
Preheat the Traeger to 500°F or heat a cast iron skillet over high heat. Sear the tri-tip for 30 seconds to 1 minute on each side.
serve
Slice the tri-tip against the grain and serve with fresh chimichurri.
