Make the custard
Warm the cream in a saucepan. Mix together the egg yolks, monk fruit sweetener, vanilla, salt and espresso powder. Slowly pour the warm cream into the egg yolk mixture.

Place ramekins on a baking sheet. Pour the custard into the ramekins. Add warm water to the baking sheet. Carefully transfer it to the oven and bake at 300°F for 30-35 minutes.
chill & top
Refrigerate baked custards for at least 4 hours. Before serving, add a thin layer of brown monk fruit sweetener to the top.
caramelize the top
Use a kitchen torch to melt the monk fruit sweetener until it is browned and caramelized.
