Sweet Potato Brussels Sprouts Hash

This quick and easy recipe makes a great breakfast or side dish! A flavorful medley of Brussels sprouts,  sweet potatoes and salty bacon is delicious on its own or topped with yolky eggs.

Cook the bacon pieces in a large skillet, then set it aside. Leave the bacon grease in the pan.

Add the onion and sweet potato to the skillet and cook until the sweet potato is almost tender. Add the sprouts and seasonings and cook for 5-7 minutes.

Stir in the bacon pieces and create 3-4 divots in the hash for the eggs. Crack the eggs onto the hash, cover, and continue cooking until the eggs are done.
