These almond flour cornbread muffins only require a handful of low-carb baking staples! Almond flour, coconut flour, eggs, butter, monkfruit sweetener and baking soda create a delicious cornbread without any cornmeal!
mix
Combine the wet ingredients in a large mixing bowl. Whisk until the mixture is smooth. Add the dry ingredients, the mix well to combine. If using add-ins like jalapeño, cheese or herbs, fold them in.
bake
Spoon the batter into a prepared muffin tin, filling the cups about 3/4 of the way full. Bake at 350°F for 15-20 minutes or until lightly golden brown on top.

Remove from the oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
