These almond flour pumpkin cookies are easy to make sugar-free and they're naturally low carb!
gather ingredients
To make almond flour pumpkin cookies, you will need: butter, pumpkin puree, vanilla extract, coconut sugar (or monk fruit), egg, almond flour, coconut flour, pumpkin pie spice and chocolate chips.
mix
Combine the butter and pumpkin in a bowl. Add the sweetener, egg and vanilla. Next, add the dry ingredients and mix to form the cookie dough.
add chocolate
Fold in the chocolate chips (or chocolate chunks) with a rubber spatula. You can also swap in chocolate for white chocolate chips, chopped pecans or walnuts.
scoop and bake
Use a cookie dough scoop to scoop out balls of dough. Set them on a baking sheet lined with parchment paper or a silpat mat. Bake for 9-11 minutes at 350°F.
cool and serve
Remove from the oven and let the cookies cool on the pan for a few minutes. When warm, the almond flour pumpkin cookies are extra delicate so make sure to let them rest. Transfer them to a wire rack to cool completely.
