gather ingredients
Ground beef, frozen riced cauliflower, onion, garlic, shredded cheese and a store-bought enchilada or salsa makes this an easy taco casserole recipe with fresh ingredients and big flavor!
brown meat
Cook the onion and jalapeño for a few minutes in a large, oven-safe skillet. Add the ground beef and cook until browned.
simmer
Add in the frozen riced cauliflower and cook until heated through. Pour in the salsa (or enchilada sauce) and simmer for a few minutes to reduce the sauce a bit.
bake
Stir in half the cheese, then top with the remaining cheese. Bake for 15 minutes at 350°F. Let the casserole rest for 5 minutes when it's done baking.
make crema
In a food processor or blender, combine the sour cream, avocado, cilantro, garlic, lime juice, salt and pepper. Blend/process until smooth.
serve
Top the casserole with your favorite taco toppings (black olives, lettuce, radishes, jalapeño, cilantro, etc.!) and drizzle the avocado cilantro crema on top.
