Completely crustless and packed with flavor, this simple quiche works for any meal!
gather ingredients
You'll need: grated zucchini, eggs, heavy cream, white cheddar, onion, Dijon, salt/pepper and Italian seasoning! Salt the zucchini and let it sit for 20 minutes, then squeeze out excess moisture.
cook onions
In a skillet, cook the onions in the avocado oil for a few minutes or until lightly golden brown. Set aside to cool.
Whisk eggs
Crack eggs into a large mixing bowl and whisk well.
combine ingredients
Whisk in the heavy cream, mustard and seasonings. Fold in the white cheddar cheese.
pour
Add grated/drained zucchini and onions to the base of a greased pie dish. Fluff the zucchini with a fork if needed.Pour in the egg mixture.
bake
Top the quiche with the Parmesan cheese and transfer to the oven. Bake at 350°F for about 30 minutes.
cool
Remove from the oven and let the quiche cool for 15 minutes. Slice and serve.
