These gluten-free banana cookies are like a slice of banana bread in cookie form! They're soft, tender, and packed with the perfect banana bread flavors.

Mash the bananas in a mixing bowl, then add the egg, vanilla, sweetener and coconut oil. Add the almond flour, flaxseed meal, baking soda and salt. Mix in the dark chocolate.

Scoop the cookie batter onto a cookie tray. Bake for 11-13 minutes at 350°F or until they're golden around the edges.
