The gluten-free peanut butter blossoms call for whole food ingredients like all-natural peanut butter, almond flour, monk fruit sweetener, coconut oil and sugar-free chocolate.
Combine the peanut butter, coconut oil and sweetener, then add the egg, almond milk and vanilla. Stir in the dry ingredients to form the peanut butter cookie dough.

Scoop out tablespoons of the dough and place on baking sheet. Bake for a few minutes, then remove from oven. Immediately press a tablespoon into the center of each cookie.
In a heat-proof bowl, melt the sugar-free chocolate with 1 teaspoon of coconut oil in the microwave until smooth.
Fill each cookie center with a small spoonful of the melted chocolate to create the chocolate "kiss." Sprinkle with flaky sea salt, if desired. Let the chocolate set.
