Made with low-carb and gluten-free ladyfingers, this easy tiramisu cake is a healthy spin on the classic Italian dessert!
gather ingredients
Mascarpone cheese, cream cheese, powdered monk fruit sweetener, strong coffee, vanilla, espresso powder and sugar-free ladyfingers (recipe linked below) are a few of the main ingredients for this gluten-free tiramisu (without eggs!).
make coffee mixture
Beat the heavy cream until whipped and fluffy. In a small dish, mix the coffee, vanilla, espresso powder and a little sweetener (set aside).
mix the filling
Instead of an authentic filling made with raw eggs, this gluten-free tiramisu recipe uses a mixture of creamy mascarpone and cream cheese. Combine the sweetener, mascarpone and cheeses until smooth.
add flavor
Add a couple tablespoons of the coffee mixture, more vanilla, more espresso powder, and beat until smooth.
fold
Fold the whipped cream into the mascarpone mixture until well incorporated.
dip ladyfingers
Quickly dip each of the ladyfingers in the remaining coffee mixture and create a single layer in the bottom of a square pan.
layer
Add half of the mascarpone mixture on top, then repeat with another layer of ladyfingers and the rest of the mascarpone.
dust
Use a fine-mesh strainer or sifter to dust the top with unsweetened cocoa powder. Cover the tiramisu cake and set in the fridge to chill overnight.
serve
Cut the gluten-free tiramisu into slices or scoop it directly out of the pan to serve.
