Arrange the veggies and the chicken thighs on a sheet pan, then drizzle them with olive oil to lightly coat. Sprinkle the salt, pepper, and harissa seasoning on top. Arrange lemon slices on top of the chicken.

Transfer the sheet pan to the oven and bake at 425°F for 35-40 minutes or until the chicken thighs are done.
make the sauce
Make a yogurt sauce by combining Greek yogurt, fresh lemon juice and chopped cilantro. Mix well.
serve
Serve the harissa chicken with the yogurt sauce on top or on the side. The cool yogurt complements the spicy harissa and is completely optional, but highly recommended!
