Mix wet ingredients
In a bowl, whisk together the melted butter (or avocado oil), eggs and vanilla.

In a separate bowl, whisk the dry ingredients together to remove any clumps.
Add the dry ingredients to the wet mixture and whisk well to combine.
Fold in prepared zucchini (grated and pressed to remove excess water).
Pour batter in the loaf pan and bake about 35-45 minutes or until done. Cool for 20 minutes in the pan, then transfer to cooling rack.
