Rich and creamy with a delicious, custard flavor, this keto rice pudding uses nutrient-dense chia seeds intead of cauliflower rice! It's easy to make and ready in 10 minutes!
gather ingredients
You will need: chia seeds, cream, unsweetened almond milk, monk fruit sweetener, vanilla, eggs, salt and cinnamon.

In a saucepan, add all of the ingredients except for the cinnamon. Whisk well to mix.
cook
Cook over medium heat for 6-8 minutes, stirring frequently. The pudding will thicken as it cooks. Remove it from heat just before it starts to boil.
serve
Stir in the cinnamon and serve warm, topped with your favorite toppings (pecans, walnuts, nut butter, or fresh fruit!).
