gather ingredients
Fresh tomatoes, aromatics, Italian seasonings and red pepper flakes give the sauce an incredible flavor!
brown the chicken
Sear the chicken in a large skillet until the pieces are browned. Set aside.
deglaze the pan
Immediately add the broth (or white wine) to the pan and scrape up browned bits. Add the shallots, garlic, Italian seasoning and red pepper flakes and cook for 1 minute.
slow cook
Transfer the pan mixture to the slow cooker or Crockpot. Add the chicken, tomatoes, salt and pepper. Cook on High for 2-3 hours or on Low for 4-6 hours.
add cream and cheese
In final 30 minutes of cooking, stir in the cream, Parmesan and olives. Cook until the cheese melts and sauce thickens.
