healthy pumpkin chicken chili

Cozy up to a bowl of this hearty, healthy pumpkin chili! It cooks in the Crockpot and couldn't be easier to prepare.

gather ingredients

You'll need: pumpkin puree, spices, carrots, bell pepper, onion, chicken thighs, chicken stock, garlic, green chiles, diced tomatoes, canned chipotle peppers and cream cheese.

Add the chicken to the bottom of a Crockpot or slow cooker. Add the diced vegetables on top.

mix and cook

Add the rest of the ingredients (except the cream cheese). Mix, then cook on Low for 6-7 hours and High for 3-4 hours. Shred the chicken, add the cream cheese and mix to melt.

Taste and adjust seasonings, if needed. Serve hot with your favorite chili toppings (sour cream, cheese, cilantro, avocado and pepitas are a great combo).
