Pumpkin chocolate chip cookies are a fall baking staple! These are low-carb and gluten free. Each cookie is chewy and perfectly-spiced with bold pumpkin flavor.
Some of the main ingredients include: butter, canned pumpkin, vanilla, golden monk fruit sweetener, egg, almond flour, coconut flour, pumpkin pie spice and chocolate chips.
Combine the butter and canned pumpkin. Add the sweetener, egg, vanilla. Next, add the dry ingredients and mix well.
Fold in the chocolate chips (or chocolate chunks) to the healthy pumpkin cookie dough using a rubber spatula.
scoop and bake
Use a cookie dough scoop to scoop out balls of dough. Set them on a parchment-lined baking sheet. Bake for 9-11 minutes at 350°F.
cool and serve
Remove from the oven and let the cookies cool on the pan for about 5 minutes. Transfer them to a wire rack to cool completely.
