This easy red wine braised beef is a healthy, homestyle recipe made with chuck roast, aromatics, beef broth, seasonings and just one cup of red wine.
brown the beef
Heat the oil in a large Dutch oven and brown the beef pieces for a few minutes per side. Transfer to a plate and set aside.
Cook the vegetables for 5 minutes to soften. Add the garlic, tomato paste, beef broth, red wine and seasonings.
bring to boil
Add the browned beef pieces back into the pot. Bring the liquid to a boil, then immediately remove from heat. Cover with the lid and transfer to the oven for 2 to 2-1/2 hours.
Remove the tender pieces of beef from the pot. Cook the braising liquid over medium heat to reduce it down and make the gravy.
