The reverse sear method is the ideal way to cook a thick cowboy steak (or tomahawk steak). This recipe includes step-by-step method, plus a simple seasoning and two steak sauce options!
gather ingredients
Take the steaks out 1-2 hours in advance to take the chill off. Preheat the smoker / pellet grill to 225°F.
season
Combine all of the seasonings in a small dish, then season the steaks generously on all sides. You'll use most or all of the seasoning.

Place the steaks on the pellet grill and cook until the internal temperature reaches 120°F.
make sauces
While the steaks cook, make the basil chimichurri (or the horseradish sour cream). Set aside.
sear the cowboy steaks
Preheat a griddle or cast iron skillet until it's hot and smoking. Sear the steaks on each side for 1-3 minutes. Remove and let rest for 5 minutes.
