This easy recipe requires eggs, jalapeño peppers, a poblano pepper, smoked paprika, salt, pepper and your favorite toppings!
Cook the onions and peppers in a pan over medium-high heat for a few minutes to soften.
Add the garlic, smoked paprika, salt and pepper to the skillet. Cook for about 30 seconds.
Crack the eggs into a bowl and gently whisk them with a wire whisk or a fork.
Pour the eggs into the pan with the peppers and cook over low-medium heat, gently scrambling them until done.
Serve the eggs immediately with your favorite toppings (cheddar cheese, tomatoes, cilantro, etc.).
