Cantaloupe, berries and mint shine in this healthy fruit salad that is naturally sweetened and low glycemic!
Perfectly-ripe cantaloupe is key- it creates a sweet and juicy base that works well with the salt and lime. You will also need raspberries, blueberries, blackberries, citrus juice, mint and a low-carb sweetener of choice.
Mash a 1/2 cup of raspberries with the citrus juice and monk fruit sweetener to create the easy dressing.
Add the cubed cantaloupe and fresh berries to the mixing bowl. Gently toss to coat the fruit in the dressing.
Add mint, lime juice and salt to taste. Add a sprinkle of poppy seeds, if desired.
