Cabbage and Sausage Soup

Roasted vegetables and smoky sausage add incredible flavor to this cabbage and sausage soup. It's healthy, easy to make and perfect for cooler temps.

Add the chopped carrots, celery and onion to a  baking sheet and roast at 425°F for 15 minutes. Add the chopped cabbage and roast at a higher temp for a few more minutes.

Brown the sausage in a large pot. Add the minced garlic, red pepper flakes, and broth. Increase the heat to high, then add the roasted vegetables.Simmer for 10 minutes.

Serve

Taste the soup and add salt and pepper, if needed. Serve into soup bowls and garnish with chopped parsley, red pepper flakes and/or grated cheese.
