Cook the leeks until softened, then add the ginger, garlic and cook another minute. Pour in the coconut aminos and coconut milk and simmer.
poach the cod
Add the seasoned cod pieces to the mixture. Cover and cook for a few minutes, then flip and cook another 2-3 minutes or until done.

Serve with the coconut milk and top with fresh basil or cilantro, red pepper flakes or chili onion crisp.
