The main ingredients in this recipe are cod, coconut milk, ginger, garlic, leeks and toppings like cilantro and fresh basil. The cod poaches in coconut milk which results in extra tender white fish.

Cook the leeks until softened, then add the ginger, garlic and cook another minute. Pour in the coconut aminos and coconut milk and simmer.
