gather ingredients
You will need: carrots, celery, onion, ginger, garlic, chicken broth, turmeric, salt and pepper, cooked chicken, kale, lemon and low-carb noodles (optional).

Cook the chopped veggies in the oil until tender, about 5-8 minutes over medium heat. Add the ginger, garlic and herbs and cook for another minute.
simmer
Add chicken broth, turmeric, salt and pepper. Bring the soup to a boil, then add the cooked chicken and low-carb noodles, if using. Let it simmer for 5 minutes. Stir in kale and parsley.
serve
Remove from heat and add lemon juice. Serve into soup bowls with extra parsley, if desired.
