- Butter. Use softened butter or substitute with extra-virgin olive oil.

Preheat the oven to 400°F. Pat dry each cod fillet to remove any excess water. In a small dish, combine the butter, lemon zest, chives, salt, pepper, and garlic powder.
Place one piece of fish in the center of a sheet of parchment paper, then spread a generous tablespoon of the butter mixture onto the fish. Place 1-2 lemon slices on top.
Pull each side of the paper up to meet above the cod, then crimp and fold the edges toward the fish to create a tight seal right against the piece. Fold the extra paper on the opposite edges down, crimping as you go. Tuck any excess paper underneath the fish. Repeat with each piece of cod.
Set on a baking sheet. Transfer to the oven and bake for 13-17 minutes, depending on the thickness of the cod. Let the fish cool for 3-5 minutes, then carefully unwrap each of the packets and serve.

Poisson en papillote is an easy-but-fancy way to make fish! This French method calls for baking cod in parchment paper packets which locks in moisture. Each piece is topped with a herb-packed compound butter and fresh lemon slices.
Ingredients
- 1 pound wild cod, cut in 3 to 4-inch pieces
- 2 tablespoons softened salted butter (or extra-virgin olive oil)
- 1 teaspoon lemon zest
- 2-3 tablespoons chopped fresh chives
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- ½ lemon, sliced thin, plus more for serving
- Fresh parsley, chopped (optional garnish)
Instructions
- Preheat the oven to 400°F. Pat dry each cod fillet to remove any excess water.
