Hi! I’m Abby, and welcome to Stem + Spoon, a space where I share the low-carb recipes I’m cooking, baking and indulging in. I’m wife to a really good man who always makes me laugh (Ian), mama to two sweet kiddos who are always underfoot in the kitchen (Maverick and Posey), and a former journalist-turned-PR-pro-turned-stay-at-home-mama who enjoys feeding my family.
I created Stem + Spoon to share exciting, easy and approachable recipes that are low-carb, keto-friendly, AND made with nutritious, whole foods. My husband Ian follows a ketogenic diet, and I mainly eat low-carb which is why the recipes here are keto-friendly, as well as gluten-free, refined sugar-free and (mostly) dairy-free.
I should say, my amazing husband Ian is the inspiration behind Stem + Spoon (and my biggest supporter/enthusiastic taste tester). At the age of 30, he was diagnosed with glioblastoma, an incurable, terminal brain cancer. Our son was two, our daughter was seven months old. The days, weeks, and months that followed are sort of a blur of adapting to our new normal, including a new diet. In my effort to learn what I could about the disease, I dove in learning everything I could. I spent countless hours pouring over news and health websites and attempting to “translate” medical literature. I quickly discovered the ketogenic diet as an adjuvant therapy for some cancer patients (especially brain cancer patients), as well as the cancer-fighting potential of specific foods. For that reason, the low-carb recipes here on Stem + Spoon not only check the keto-friendly box, but many also have an emphasis on anti-cancer foods.
Each recipe I share here on Stem + Spoon is one my family eats and enjoys (well, we are working on the kiddos 🙂 ). Some lean more on the keto side, some are mainly low-carb. We think they are all pretty tasty and I hope you love them as much as we do!
