the ingredients
Basic ingredients and a few minutes of prep are all you need to create a delicious keto cinnamon mug cake!
Here's a look at the ingredients but be sure to scroll to the printable recipe card at the bottom of the page for all of the details:

- Dry ingredients: A combination of almond flour, coconut flour, baking powder, and granulated monkfruit sweetener are your basic cake ingredients.
- Wet ingredients: Melted butter, an egg, and vanilla extract are the wet ingredients you'll add to the cake batter.
- Cinnamon swirl: Butter, sweetener, and cinnamon create a quick and simple cinnamon swirl. You'll dollop small teaspoons of it into the cake batter.
- Cream cheese frosting: A little bit of cream cheese, more vanilla, sweetener and a touch of sour cream or Greek yogurt make a sweet and tangy frosting you'll spread on top of the cake while it's still hot. The cream cheese glaze will melt just a bit to create an extra gooey cinnamon roll mug cake.
the method
Here's a look at the process which is done in four simple steps!

In a small mixing bowl, mix together the melted butter, egg, sweetener and vanilla. Stir in the dry ingredients and mix until a smooth batter forms.
In separate small dish, mix the softened butter with sweetener and cinnamon.

Pour half of the cake batter into a microwave-safe mug (at least 10 ounces), then spoon small amounts of the cinnamon mixture into the cake batter. Pour the other half of the batter in and repeat with the cinnamon mixture.
Place the mug in the microwave and microwave on High for 60-70 seconds. Remove, then let it set for at least five minutes (it'll be very hot!).
Mix together your softened cream cheese, sweetener, vanilla, and sour cream until it's smooth. Spread it over the hot mug cake and let it sit a minute so the icing mixture can melt slightly.
**I made this keto mug cake in a shallow mug, which makes it easier to invert onto a plate (pictured). It's not necessary, but I shared how to do that in the Recipe Tips section.**

tips for mug cake success
- Use a larger mug so the batter has room to rise without overflowing.
- Don't overcook-start with 60 seconds, then give it extra time if needed, in 10-second bursts. The cooking time may vary based on your mug and your microwave.
- Depending on your mug, the cinnamon mixture may sink to the bottom. That's okay!
- If you want to invert the mug cake onto a plate (as pictured) simply use a spoon to gently pull it away from the sides of the mug and tip it onto a plate. Spread the cream cheese icing on top and enjoy!
- You can easily divide this between two ramekins for two, single-serve portions that are a tiny bit smaller.
- A small amount of sour cream or Greek yogurt will give your frosting a delicious tanginess. If preferred, you can omit it and use 2 tablespoons of cream cheese.
substitutions
- I like using granulated monk fruit sweetener with allulose because it's ultra fine and it also dissolves well. If you want a granulated monkfruit sweetener with erythritol, make sure to use a powdered version so that your icing doesn't turn out gritty. If you'd like to use pure granulated allulose, I recommend increasing the amount by 1 teaspoon in the mug cake and by ½ teaspoon in the cinnamon mixture and the frosting.
- For a dairy-free keto cinnamon roll mug cake: Substitute the butter for your favorite plant-based butter or use coconut oil. You can substitute the cream cheese for a vegan cream cheese or a whipped coconut cream.

storage
If you wish to save some of this treat for another time, simply cover your mug cake with plastic wrap and store it in the refrigerator for up to two days (for maximum freshness). You can reheat it in the microwave for just a few seconds.

Keto Cinnamon Roll Mug Cake
This keto cinnamon roll mug cake makes the perfect single-serve treat with all of the elements of a warm, gooey cinnamon roll. It's low-carb, gluten free, and blood sugar friendly.
Ingredients
mug cake
- 1 tablespoon salted butter, melted
- 1 large egg, at room temperature
- 1-½ tablespoons granulated monkfruit sweetener with allulose
- ½ teaspoon vanilla extract
- 1-½ tablespoons almond flour
- 1 tablespoon coconut flour
- ½ teaspoon baking powder
cinnamon mixture
- 1 tablespoon salted butter, softened
- 1-½ teaspoons ground cinnamon
- 1-½ teaspoons granulated monkfruit sweetener with allulose
cream cheese frosting
- 2 tablespoons cream cheese, softened
- ½ tablespoon sour cream or Greek yogurt (optional)
- 1 teaspoon granulated monkfruit sweetener with allulose
- ¼ teaspoon vanilla extract
Instructions
- Make the mug cake: In a small bowl, whisk together the melted butter, egg, 1-½ tablespoons of monkfruit sweetener, and vanilla extract. Add in the almond flour, coconut flour, and baking powder. Whisk until smooth.
- Make the cinnamon mixture: In a separate small dish, combine the softened butter with the ground cinnamon and sweetener.
- Microwave the mug cake: Pour half of the cake batter into a large, microwave-safe mug. Use a teaspoon to spoon out small dollops of the cinnamon mixture into the cake batter- use about half. Pour the rest of the batter on top and repeat with the rest of the cinnamon mixture. Place the mug in the microwave and cook on High for 60-70 seconds. Remove from the microwave and let the mug cake sit for 5 minutes to cool (it will be very hot).
- Make the cream cheese frosting: While the mug cake cooks and cools, combine all of the ingredients for the cream cheese frosting in a small bowl. Use a spoon to mix well (this should be easy with softened cream cheese).
- Serve: Spread all of the frosting on top of the hot cake. If you'd like to invert the mug cake onto a plate first, use a spoon to gently separate the cake from the edges of the mug and tip it out onto a plate (then spread the frosting on top). The frosting will become perfectly gooey as it warms up on top of the hot cake.
Notes
- If the mug cake needs a little more cook time, microwave it for 10 more seconds.
- Depending on your mug, the cinnamon mixture may sink to the bottom (that's okay and doesn't affect the taste!).
- You can easily divide this between two ramekins for two, single-serve portions that are a tiny bit smaller.
- A small amount of sour cream or Greek yogurt will give your frosting a delicious tanginess. If preferred, you can omit it and simply use 2 tablespoons of cream cheese.
- For a dairy-free keto cinnamon roll mug cake: Substitute the butter for your favorite plant-based butter or use coconut oil. You can substitute the cream cheese for a vegan cream cheese or a whipped coconut cream.
- Monkfruit sweetener with allulose is my preferred sweetener for this because it is fine and allulose won't make the frosting gritty so you can use it in all three components (cake, cinnamon mixture, frosting). If you wish to use a monkfruit/ erythritol blend, make sure it's powdered.
