- Olive oil. I used extra-virgin olive oil for brushing on the peaches, but you can also swap in avocado oil.
- Monk fruit sweetener. Make sure you get granulated monk fruit sweetener, preferably golden, which has a flavor similar to brown sugar. This adds a touch of sweetness without any added refined sugar.
- Avocado. Slices of avocado up the healthy fat content in this salad and adds a delicious creaminess.
- Arugula. This is the bed of greens for the salad. Use your favorite greens if you're not a fan of arugula.
- Burrata. A silky soft cheese with a rich taste that pairs perfectly with the peaches and arugula.
- Pecans, walnuts or a grain-free granola. For added crunch and nutty flavor. I love grain-free, low-carb granola on salads for a touch of extra sweetness, but if you're not a fan, sub in walnuts or pecans.

Here's how easy it is to make this delicious summer salad
First, heat the grill over medium heat, about 375-400°F. Next, brush the cut side of the peach halves with olive oil. Sprinkle with salt, pepper, and the monk fruit sweetener.
Place the peaches on the grill grates with the cut side down. Grill peaches for 3-5 minutes, then remove.
Arrange the arugula on a plate, then add the avocado. Place the grilled peaches on top of the salad (either halved or sliced into smaller pieces, if desired).
Pull apart the burrata and arrange around the peaches. Top with salt, pepper, and pecans or grain-free granola before adding a drizzle of olive oil and balsamic vinegar.

- Make sure to buy ripe but still firm peaches for grilling. Overripe peaches may fall apart on the grill.
- If you don't have a grill, you can also make this salad on a grill pan or in the oven using the broiler function.

Ingredients
- 2 peaches, sliced in half and pitted
- 2 teaspoons avocado oil (or olive oil)
- Pinch of salt
- Pinch of pepper
- 1 teaspoon granulated monk fruit sweetener
- 5-6 ounces arugula
- 1 large burrata ball
- 1 small avocado, sliced
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
