While the base is made of "whipped" cottage cheese, it's technically not whipped but rather blended or processed until smooth. This eliminates the curds of cheese and transforms the consistency into a fluffy and creamy blank slate ready for flavorful add-ins.

In a blender or food processor, add the cottage cheese, seasonings and lemon juice. Blend until whipped and smooth.
Transfer to a mixing bowl and add in the chopped chives and dill.

- Depending on your blender or food processor, you may need to process the cottage cheese for a few seconds extra. I have no issues using my Vitamix but if needed, scrape down the sides of the blender with a rubber spatula to make sure everything is blending evenly.
- For a hint of tanginess, you can mix in ¼ cup of sour cream or Greek yogurt.
- After mixing in the fresh herbs, taste the dip and add more seasonings if you prefer.
- The cayenne pepper is optional and adds a medium amount of heat to the dip. You can omit it entirely or replace it with a dash of sriracha or your favorite hot sauce.
